Southwest Spaghetti Squash Bake

INGREDIENTS

 1/2 cup of Cottage Cheese

1lb ground beef (4 ounces per half of spaghetti squash)

Spaghetti squash (serving size is ½ squash)

1 onion

1 packet of taco seasoning

Salsa – ½ cup per half of squash

Cilantro

Mozzarella cheese ( ¼ cup per half of squash)

Optional: top with more salsa and sour cream

DIRECTIONS

  • Cut the squash in half and clean out the seeds.
  • Lay squash face up, drizzle with olive oil and salt and pepper. Place the squash face down and bake at 400 degrees for 30-40 minutes
  • While the squash is baking, brown the ground beef and dice the onion, then add them to the beef along with the taco seasoning. Cooked until the beef is done and onion is soft.
  • Remove the squash and scrape the squash out of the skin using a fork. Add the “spaghetti” Squash to a bowl (Just the squash from one half of squash).
  • Add to squash: ½ cup of salsa, 4 ounces of ground beef, and ½ cup of cottage cheese. Mix together.
  • Add the mixture back to half of the squash skin and then top with cheese. Bake for another 5 minutes.
  • Remove squash from oven and top with cilantro. Add: salsa, sour cream and avocado to desired taste. Greek yogurt can subsitute  sour cream!
  • Enjoy!
